Balmoș is the shepherd’s dish of Maramureș — a simple, hearty meal made from the foam of sheep’s milk, cornmeal and sweet ewe’s cheese. The recipe comes from Dunca Nița, 70 years old, from Glod, and is part of the culinary heritage collection gathered by the Maramureș Museum in Sighetu Marmației.

Gather the foam from the sheep’s milk and bring it to the boil. When it starts to boil, add a little cornmeal and sweet ewe’s cheese. Stir continuously, until the balmoș becomes creamy and smooth.
📖 The story of the recipe
Recipe by Dunca Nița, 70 years old, from Glod, a village in Țara Maramureșului. Balmoș was usually made in summer, at the sheepfold, when the sheep gave plenty of milk — and the foam gathered from the fresh milk was too precious to be thrown away.
