A special version of cabbage rolls, where the dough is rolled in stevia leaves, a wild plant used in Maramureș as an alternative to pickled cabbage. Recipe from Dunca Ileana, 93 years old, from Șieu.
🥣 Ingredients
- dough for cabbage rolls (flour, water, salt)
- stevia (sorrel) leaves
- tomato juice
👩🍳 How to prepare
The dough is made as for cabbage rolls, in the traditional way. It is rolled in stevia leaves instead, which give the dish a slightly sour and fresh taste. The rolls are boiled in tomato juice, over medium heat, until the dough is cooked and the leaves have softened.
📖 The story of the recipe
Recipe from Dunca Ileana, 93 years old, from Șieu, Maramureș. Stevia (sorrel) is a wild plant often used in Maramureș cuisine, especially in spring, when the young leaves are tender and full of flavor. Instead of cabbage leaves, housewives used stevia leaves to give fasting cabbage rolls an extra taste.
