Cabbage stuffed with buckwheat, also called „haluste”, is a traditional Maramures recipe that replaces meat with buckwheat and cornmeal. A delicious Lenten dish from the historic Maramures region.
🥣 Ingredients
- onion
- oil
- carrot
- buckwheat
- cornmeal
- sauerkraut leaves
- salt
- pepper
- beet or grape leaves (spring, optional)
👩🍳 Instructions
Peel and finely chop the onion. Fry in hot oil with a grated carrot. Wash the buckwheat well and scald the cornmeal. Mix everything, fill the sauerkraut leaves and bring to a boil. In spring, they can be made from beet or grape leaves for a fresh and special taste.

Recipe by Ileana Botos, 57 years old, from Lower Apsa (Apsa de Jos), Ukraine. This recipe is part of the „Maramures GastroEtnoArt” collection published by the Maramures Museum in Sighetu Marmatiei. Haluste are a traditional Lenten version of stuffed cabbage rolls, specific to the Ukrainian communities in historic Maramures.
