Gulyásleves, veal goulash with seasonal vegetables, is a hearty and flavorful soup, a traditional recipe from Bocicoiu Mare. Tender meat, fried vegetables and egg-flour dumplings make it ideal for family meals.
🥣 Ingredients
- 1 kg of veal
- 3 carrots
- 2 onions
- 1 parsnip
- 1 smaller kohlrabi
- ½ celery
- 1 tomato
- 1 bell pepper
- 2 potatoes
- caraway seeds
- sweet paprika
- salt and pepper
- 1 egg and flour (for dumplings)
👩🍳 How to prepare
Stir in the onion and salt. Cut the carrots into sticks of approx. 3 cm, same for parsnips, kohlrabi and celery. Add them one by one over the onion and fry together. Cut the meat into cubes, add over the vegetables and continue to soften until the meat turns white.
Cut the pepper into cubes and add over the mixture. Add a teaspoon of caraway seeds, fry a little more, add sweet paprika, cover with water and let it simmer. When the vegetables are half-cooked, add the cubed potatoes, then salt and pepper to taste.
Meanwhile, peel the tomato, cut into cubes and add to the soup. When everything is cooked, make a mixture from an egg and flour, form dumplings with a teaspoon and boil them in the hot soup.
