Cornbread with apples and potatoes is a traditional Maramureș treat, similar to a cake, combining the sweetness of apples with the rich flavor of cornmeal. The recipe comes from Valea Stejarului, a picturesque village in Maramureș, where housewives prepared this delicacy in wood-fired ovens.

- cornmeal
- wheat flour
- 2 large apples
- 2 potatoes
- yogurt (sămătișă)
- mineral water
- yeast
- baking soda
- 2 eggs
- sugar
- 100 ml oil
👩🍳 Preparation method
Peel the apples and potatoes and grate them on the fine side of the grater. In a bowl, mix cornmeal with a little wheat flour. Add yogurt to moisten the flour, together with a little mineral water.
Dissolve the yeast in mineral water and add baking soda to the mixture. Add the eggs, a little sugar and oil. Mix all ingredients until a soft dough forms. Incorporate the grated apples and potatoes into the dough.
Pour the dough into a greased baking tray and place in the oven at moderate heat until the cornbread turns golden brown. Allow it to cool before slicing and serving.

Recipe from Ioana Michnea, from Valea Stejarului. This dish is part of the collection of the Maramureș Museum in Sighetu Marmației, gathered through the „Maramureș – GastroEtnoArt” project. Cornbread was a common dessert or snack in Maramureș households, especially in autumn when apples and potatoes were abundant.
The combination of cornmeal with apples and potatoes is ingenious and specific to the area, where corn flour was readily available, and apples added natural sweetness without needing much sugar. Yogurt and mineral water helped create a light and fluffy dough.
