A healthy and hearty soup made of dried beans and homemade noodles, with sautéed root vegetables. A simple fasting recipe from Bârsana, one of the best-known villages in Țara Maramureșului.
🥣 Ingredients
- 500 g dried beans
- 1 onion
- 1 carrot
- 1 parsley root
- 1 parsnip
- a tablespoon of oil
- homemade noodles
- salt
- pepper
- fresh dill (optional)
👩🍳 How to prepare
The dried beans are soaked. The next day they are boiled, and the first water in which they boiled is thrown away. Bring them to boil in fresh water. Then add the sautéed onion and the cleaned, finely chopped carrot, parsley and parsnip. When the beans are almost cooked, add the homemade noodles. Add salt and pepper to taste. After removing from the heat, finely chopped fresh dill can be added to the pot.

Recipe from Pop Cecilia, 87 years old, from Bârsana, famous for its wooden churches and mills on the Iza Valley. Bean soup with homemade noodles was the fasting meal of Maramureș housewives: cheap ingredients, cooked with patience, which fed the family all winter long.
