Beans (peas) with homemade noodles is a hearty and flavorful soup, typical of traditional Maramureș cuisine. The recipe comes from Vadu Izei, a village in historic Maramureș, where simple yet nourishing dishes were prepared from locally available ingredients.
🥣 Ingredients
- dried beans (or peas)
- flour
- water
- salt
- oil
- sweet paprika
👩🍳 Preparation method
Boil the beans in salted water until tender. Separately, make a dough from flour, water and salt. Roll it out thinly and let it dry. Once dried, cut the dough into small nail-sized pieces with a knife — these are the homemade noodles.
Boil the noodles separately in boiling water until cooked, then add them to the boiled beans. Prepare a sauce by frying one tablespoon of flour in oil with paprika and water. Cook the sauce until it thickens, then pour it over the soup and bring to one more boil. Adjust salt to taste.
📖 The story behind the recipe
Recipe from Băbuț Maria, 86 years old, from Vadu Izei. This dish is part of the collection of the Maramureș Museum in Sighetu Marmației, gathered through the „Maramureș – GastroEtnoArt” project, which documents the multiethnic traditional recipes of the Maramureș region. Bean soup with homemade noodles was a common meal in Maramureș households, especially during fasting periods or on regular days, using pantry staples.
The uniqueness of this recipe lies in the homemade noodles, made by hand and cut into small pieces, giving the soup a special texture. The paprika sauce binds all the flavors together, giving the dish its distinct Maramureș character.
