Bean soup with sauerkraut is one of the most beloved traditional dishes in Maramureș. The recipe comes from Dunca Ileana, 93 years old, from Șieu, and was collected by the Maramureș – GastroEtnoArt project team, coordinated by the Maramureș Museum in Sighetu Marmației.
🥣 Ingredients
- beans
- salt
- 1-2 onions
- sauerkraut
- 1-2 tablespoons of flour
- tomato paste
- water (including sauerkraut cooking water)
👩🍳 Preparation
Put the beans to boil with salt and 1-2 finely chopped onions. Separately, boil the finely chopped sauerkraut. When it is cooked, strain it and put it over the beans.
Add the water in which the cabbage was boiled, to taste — as sour as you like the soup. At the end, make a roux from 1-2 tablespoons of flour, tomato paste and water, and pour it over the soup.
