Gulyás – a hearty beef and pork stew with vegetables and dumplings (nokedli), a dish preserved in the kitchen of the Hungarian community in Sighetu Marmației. The recipe comes from Berta Chirilă, 65 years old, from Sighetu Marmației, collected as part of the Maramureș – GastroEtnoArt project of the Maramureș Museum.

- flour (5-6 tablespoons, for the nokedli)

👩🍳 How to prepare
Peel and chop the onions (more) and fry them in hot oil. Add the beef and pork, cut into pieces, and make a stew. When it is ready, add the diced vegetables: parsley, carrot, celery and kohlrabi.
Add water and simmer slowly. Add hot pepper paste and cumin seeds. When they are almost cooked, add the diced potatoes.
Meanwhile, make the nokedli dough: beat 2-3 eggs with a little water and a teaspoon of salt, add the flour (5-6 tablespoons) and mix well. With a spoon, beat the dough against the walls of the bowl until it is no longer lumpy. When the potatoes are almost cooked, with a teaspoon soaked in water, break small pieces of dough (nokedli) directly into the gulyás.
Season with salt to taste and, if you want it spicier, add more hot pepper paste. Let everything boil together, and at the end add finely chopped parsley and lovage leaves.

The recipe was given by Berta Chirilă, 65 years old, from Sighetu Marmației, and is part of the collection of traditional multi-ethnic recipes „Maramureș – GastroEtnoArt” published by the Maramureș Museum in Sighetu Marmației. Gulyás is a dish rooted in Hungarian cuisine, carefully preserved in the communities of Sighetu Marmației, where the kettle stew was cooked over low heat with meat, plenty of onions and paprika. The nokedli – small dumplings broken straight into the pot – turn this stew into a full meal, exactly as it was served in the families of the area.
